How they make a profit from these Viking-like spreads is beyond me, but perhaps not everyone is as greedy as I am. No longer exclusively for special occasions, cheapskates, and the less discerning, even buffet snobs have to admit the general quality has gone way up in recent years, while prices have remained steady.
